Year 28: May the Adventures Continue

Celebrating my 28th birthday this week was the easiest, most relaxing birthday yet! Last weekend I ventured back to my ole stompin' grounds to visit my family and babe arrived just in time celebrate on the actual day! My work family gave me the day off, I was too afraid to ask since I literally just started but they are too sweet and suggested it! I had the kindest words left on voicemail, on my Instagram and "wall" on Facebook, and best texts sent from loved ones, your birthday definitely makes you feel loved! Being one more year closer to the usually dreaded 30th, I realized that I'm actually looking forward to being initiated into the "dirty thirty" club! The older I get, the more my tastes are refined, my goals are more defined, and I find quality people to spend my precious time with. The beau decided he was going to play a little trick on me. And My Favorite of These...Breakfast!

The only BS I need in my life is breakfast and squats! Recently while on my usual Pinterest peruse, I stumbled upon breakfast prepping. Now, I am NOT a morning person. In fact, I'm stunned I've gone this long at my new job without being late! Sad, but true! Even though I don't care for the anthem of the alarm clocks, I absolutely love breakfast foods! Pancakes, omelets, bacon (duh!), and of course, COFFEE!!! However, I've been severely lacking in that meal time due to the 5am wake up time so I decided that I would try this breakfast prep for the next two weeks! I'm super excited!! Will be me tonight!! The pin about breakfast was the basis for my prep but I tweaked it a bit to make it my own! But First, Coffee

Hell hath no fury like a woman without her coffee! A couple months ago, I posted on my social media sites about my current coffee choice, the pros and cons, and a plea for suggestions to my peeps about what to do. The issue: holy tummy pain! I had been using Folgers Breakfast Blend for what seems like forever in my caffeinated career. Suddenly, the taste turned bitter, the aftermath was severe stomach pain after the first sip, this was heartbreaking! If anyone knows me well, they know I NEED coffee like a bum needs cardboard. Without it, adulting will not happen...well, it may happen, but not well! A couple suggestions came and I decided to try a few! First, I tried Starbucks Blonde: Mellow and Soft . Since the name describes this as mellow and soft, I was open minded. I didn't want to try their breakfast blend since I wanted something completely new. My snowman cup was a secret Santa gift and I use it year round!  I really did like this so much better than the Folgers...

Workin' on my fitness!  About a month ago,  I posted about my fitness journey and the inspiration that motivates me towards my goals. I've always been super teeny, petite and never really gained much weight until I was in nursing school and just before I was diagnosed with t1d. I had always wanted this fit, toned figure but wasn't educated in the slightest about how to go about doing it. I knew nothing about good and bad carbs, protein, how certain fats can be good for you, workouts, supplements, and schedules. After much educating, mostly through my favorite social media athletes (mentioned in this post ), I decided to make my goals and be motivated this year to actually progressing towards achieving them. I began a cycle of supplements today, which is what spawned this post in the first place. I've learned that fitness is all about your own journey. For the Love of Breakfast

Happy hump day!    It's almost noon and I'm still in pj's with my hunk eating a little brunch, I thought I'd share the healthy but yummy recipe I whipped up!    Today babe flies out to SoCal and we are spending the morning relaxing before we have to start adulting! We woke up late and he was craving biscuits and gravy, I love breakfast foods! I don't care if it's 4 in the morning or 11 at night, bring on the biscuits! Recently, I found a biscuits and gravy casserole that I loved and my biggest reason for doing a casserole instead of just making biscuits and gravy is that it's less mess, will hold for more than one day which means less waste! I tweaked this recipe to be healthier since I'm doing my 30-day challenge by using turkey bulk sausage, less salt, and reduced fat milk. I put this in an 8x8 or 9x9 square glass baking dish with a lid so I can store for easy breakfasts throughout the week!  Ingredients: 16 oz Jenny-O lean ground turkey...
